My engine management light came on this morning and the display reported an IAT Sensor error. The AT reading was flipping between -21C and +26C. The bike is still running ok, so what if any impact does the IAT sensor have on the fueling?

As GM says. It's important, however the closed loop control will eventually correct for errors, but at the expense of rough running.
I'd check the connectors first, maybe silicon grease them...
