Nobody knows what charging temps they are seeing cos they are not measured, besides, where would you measure it? As for coolant temperatures, IIRC, my 1125 used to run between 88 and 92 when warm which is around about the thermostat opening temperature, which is more or less the same for any watercooled engine, cars and bikes alike. If you were running the engine too hot, I am sure the IC would tell you. As for the best temperature, the 1125s I have seen run on the dyno make more power at 92 than 88 deg C.
As for your charging capability to coolant temp relationship, they will be related, but only loosely. You really want the oil temperature as the stator runs in oil, the hotter the oil, the more resistance in the windings and the lower the current it can supply. If the equation of coolant temp against battery voltage works for you, then great...
