Just did an oil change on my friends 06 Ully. I noticed a lot of vibration in the bars and then watched the engine leap about under the frame. My Ully's engine does not leap around like his. A quick spin around a large carpark showed the bike tipping into corners, very scary. Is the engine mount shagged ? If so how do I replace it and what torque setting is it supposed to be.

Have a look above this thread for a manual...

Does the mount rest on the retaining bolt when the bike is stationary? Or do you have some space?

Tipping into corners doesnt sound like a mount issue, sounds more like tyres, tyre pressures or headraces...

From my oppinion, a worn front mount initiates noticeable vibrations when the engine is forced to turn forward, which can be tested by going fast through a not too tight turn e.g. large roundabout, or when riding over a bump.
