Bike looks lovely Jez
I find that with leathers theres no prob at all with heat sheild off even when riding in bike jeans, keeps you warm on days that are a bit cold for jeans.
Some times the top of rocker cover gets very hot in slow traffic but there is a different sheild for that which I binned years ago.
Only issue can be when riding two up I sit further forwards and that is a bit warmer but just stick my knee out an inch or so.
At the end of the day go with whats comfyest and what you think looks best.
